pancakes

been thinking about the pancakes from a restaurant in New Canaan Ct., that sadly burnt town.

They were made with a buttermilk batter,  a hit of cayenne and a cup of corn niblets and Cheddar cheese. So good, maple syrup elevates further. The cheese would get a bit crusty in that wonderful cheesy way, the corn still bursting with flavor. So easy to do.

 

Nice with Prosecco drizzled with pomegranite molasses
