Without a doubt, one of my favorite restaurants here in Portland is Autentica. The chef and owner is Oswaldo Bibiano, who came to the US after working in kitchens in Acapulco. The tacos al pastor are as good as any I have ever had, the queso fundido with chorizo with their house made tortillas are over the top amazing. On Thursday night he makes Pozole, a Mexican pork and hominy stew. The stew is served with all kinds of toppings, and with a cold beer or one of their perfect margaritas you will be a happy camper. The flan is good and so is the Tres Leches cake. I have a recipe for one that I will post in a few days. Relatively easy and maybe the best cake in the world.
