Bunuelos are time consuming. They are light and flaky and wonderful. This short cut is almost as good, and a breeze to make. They can be sweet or savory.
small flour tortillas, cut in wedges
parmesan and spices; cumin, chili powder anything you like.
Fry the tortillas in oil that is hot but not smoking. Remove when they are golden brown and dip in either the cinnamon sugar or Parmesan spice mixture. Spicy ones are great with guacamole. Cinnamon sugar with vanilla or cinnamon ice cream.
