Farmers Market today and decided to make something with my second favorite magic mushroom.
1 tsp. olive oil
1/2 lb chanterelles
1/2 teaspoon kosher salt (that’s pretty much all I use now)
1 tsp. unsalted butter
1 large shallot, minced
1 scallion, chopped
1/4 cup chopped fresh, thyme and Italian parsley
In a large skillet heat the oil over medium heat. Add the mushrooms with the salt and cook for 3-4 minutes. Add the butter, shallot, scallion, herbs and the black pepper. Saute an additional 3 minutes. Garnish with the chopped chives. Serve as a side or toss with a pasta of your choice. Perhaps Pappardelle.
