root vegetables, any combo, make a soup

1 large beet, peeled and cut in chunks

1 medium turnip , peeled and cut in chunks

1 parsnip, peeled and cut in chunks

1 sweet potato, peeled and cut in chunks

1 medium onion, peeled and cut in chunks

2 cloves garlic, minced

2 tablespoons olive oil

4 cups chicken stock

1 teaspoon fresh horseradish

Salt and pepper

sour cream

2 tablespoons fresh dill, chopped

heat oven to 375. Combine all veg in a roasting pan and toss with the olive oil. Roast for 30 minutes. Place veg in soup pot and add stock, horseradish, salt and pepper. Simmer till vegetables are tender. Puree in blender, taste and add salt and pepper. Garnish with sour cream and dill.
