Rings of Acorn Squash

Acorn squash rings are baked with orange juice and seasonings.


2 large acorn squash,2/3 cup orange juice,1 cup packed dark brown sugar, 1/2 cup Lyle’s Golden Syrup, 1/2 cup melted butter, 1 tablespoon grated orange peel, cinnamon, nutmeg.

Way to go

1. Cut ends from squash and  cut into crosswise slices 1/3-inch thick. Place slices in a large lightly buttered shallow baking pan; add orange juice. Cover with foil and bake at 350° for 30 minutes. Combine brown sugar, corn syrup, melted butter, orange peel and a sprinkling of the spices.  Pour over squash rings. Bake, uncovered, about 15 to 20 minutes longer, basting occasionally, until acorn squash is done and nicely glazed.  If there is a large amount of sauce left, pour it into a saucepan and cook for 10-15 minutes so that the sauce can reduce and thicken.  Recipe serves 8 to 10.
