this is a wonderful drink, and try the mussels


 

Dorleac Cocktail    Saint Jack

 

1.5 ounces (3 tablespoons) Hennessy VS

1 ounce (2 tablespoons) Dolin dry vermouth

.75 ounce (4 ½ teaspoons) lemon juice

.25 ounces (1 ½ teaspoons) honey

½ teaspoon Apple Gastrique

 

1. Combine all ingredients and shake. Strain into a well- chilled glass and serve immediately.

 

Apple Gastrique

 

3 cups sugar

Pinch salt

2 cups freshly extracted apple juice

¼ cup lemon juice

1 ¼ cup apple cider vinegar

 

1. Caramelize sugar with the salt in a heavy bottomed saucepan. Add the remaining ingredients and reduce to a thin syrup (about the consistency of warm maple syrup)

2. Chill and keep in fridge

 

 

 


Recipe I did for Diane Magazine- really tasty


 

]Chocolate Pudding– serves 6

 

Prep time- 10 minutes

Cook time- 15 minutes

 

2 large egg whites

10 tablespoons cocoa, unsweetened

2 heaping tablespoons cornstarch

2 &1/4 cups low fat milk

½ cup sugar

1 teaspoon vanilla

18 raspberries

 

  1. In an electric mixer lightly beat the egg whites. In a medium bowl combine the cocoa and cornstarch. Whisk in 1 cup of milk and make smooth.
  2. Heat the remaining milk and the sugar and bring to a boil, whisking constantly. Boil for 2 minutes. Remove from the heat.
  3. Add the cocoa mixture, return to the heat, and boil again, whisking constantly. Remove from the heat
  4. Add one cup of the cocoa mixture to the egg whites, whisk and return to the pan. Cook on low, do not allow to boil. Remove from the heat, stir in the vanilla, and allow to cool. Place in the fridge when it has cooled to room temperature.
  5. Serve topped with 3 raspberries each portion.

 

*Special night dessert- Turn each pudding into an elegant parfait. Layer the pudding and sliced strawberries and top with a honey yogurt sauce.

Spam Musube Ate-o-Ate


The Musube roll/sandwich is a perfect way to experience the acquired taste of that mysterious food, Spam.  Although it is a side, I have come to love it as a simple, easy lunch. This simple combination of Spam, nori, rice, and a piece of thin omelet makes for an unusual, pretty fab seaweed enclosed sandwich. Chef Ben Bettinger, of yummy Beaker and Flask, has one every weekend. He claims that it is the perfect hangover food!  I am not suggesting that he has a hangover every weekend, but I do know that he is a very happy regular there. The restaurant made taro chips are fantastic and crunchy, and accompany many of the dishes. The pineapple cabbage slaw is a great side and before heading out don’t pass up the shaved ice. It is awesome.
